Decoction and technical advancement

Dear Colleagues,

as usual, the Aliquot Brewery is ahead in both quantity of production and technique development. This time I tried an alternative mashing protocol for my marzen. Traditionally, german brewers have been using decoction to maximize the yield of malt extraction. This method is still widely used to improve the malty taste in beers that require it. It does take a little longer time, as you have to boil a part of the grains and you use that to raise the mash temperature to the saccarification stage. Find the details in the recipe of Mmmhhhrzen. 

Guild Meeting Online?

Dear colleagues,
as you know it was planned to reunite the members of the Guild for an online meeting to follow up the Badger's crisis before Christmas, but problems from the canadian side of the Guild did not make it possible.
The Crisis still has to be addressed. As other Guild members have moved in ridiculous time zones, I hereby ask them what is their availability for a Crisis meeting in one of the upcoming weekends.
Please comment to this post specifying your available dates in the next month or so. A poll will be then created to clarify the situation.

The iBadger

Members of the guild, The Mangled Badger Brewery, after lengthy discussions with Steve Jobs has embraced technology. After all, Steve Jobs was such a rampant alcoholic/ beer enthusiast that pancreas exploded. The health and fitness department at the Mangled Badger are currently working on a liver and pancreas workout video, to be released in 2012. Anyways, ibadger technology allows me to blog live from ground zero, in this case the American Craft pub in Brookline Boston.

New year, new production

At the Aliquot brewery the production started again, after the longest pause since it moved to Calgary. During the holidays, we supplied the beer for the year party, and that put the stocks at the aliquot brewery to a discomforting  20 liters left. Not to worry, soon we'll replenish them with a new wave of deliciousness. 

The Kaiser Cider Rescue

Members of the guild, having faced an unprecidented crisis in previous weeks, the staff at the Mangled Badger took desperate actions to rescue Kaiser Cider from a fate in the sewerage systems of Hamburg. The crack team of scientists (all of whom have PhDs) after setting up a think-tank took measures salvage the cider. The rescue mission eclipsed the rescue of the Chilean Miners and the Apollo XI mission.

Grand Chimay Clone

Dear colleagues,

the BBB is proud to announce that another brew is under fermentation. Since the previous great success raised by our signature Duvel Clone, we are thinking to specialize in Belgian Strong Ales, and therefore attempted to clone the Chimay Blue, CEO's second ever favourite beer.

As said, fermentation is underway, with the airock relentlessly bubbling besides me as I write. The recipe can be found in the appropriate page. The plan is to have one week primary, 5 weeks secondary and 6 weeks in the bottle.

CRISIS AT THE MBB!

Members of the guild,

There is currently a crisis unfolding in Hamburg, unparalelled in the history of the Mangled Badger Brewery. In terms of world history, the Kaiser Cider Crisis would rank as follows:

1. The Kaiser Cider crisis 2010

2. The Cuban Missile Crisis 1962

3. The Ethiopian famine of 1984-1985

4. The Guild Crisis 2009, when the BBB started kit brewing

5. The Chernobyl disaster 1986.

Consumption, no production

 

Seeing as the Casa del Wood has dropped the ball on the brewing, there is little to blog about. However, I do recall that consumption of particularly opulent beers is worthy of mention on the site. Mikkeller is on tap at the new Bishop's Arms located in Gustav Adolfs torg, Malmö. A canoe stretches overhead the full-length of the bar which holds countless taps, many delivering local craft beer.
